Austrian field peas, or winter peas (Pisum sativum), are one of my favorite wintertime cover crops. I plant my field peas in October. They overwinter in my climate and take off in early spring. They are cold-hardy to zone 6, and can survive down to 0 degrees Fahrenheit. If you live in a colder climate, you can plant them in early spring. 🌙 Field peas have have edible shoots and flowers.
